Cherry Strudel – another video starring Leigh Drew!

As detailed in my last post, a Sunday in June 15 years ago marked my first day being vegan. So it’s only fitting that today, the final Sunday of June 2013, I post up the third and final (for now at least!) Veganthused video starring Leigh Drew and her marvellous vegan creations.

Cherry_Strudel_-_Leigh_pictureCherry Strudel from Wrapped in Pastry by Leigh Drew – photo courtesy of Leigh DrewThis time around, Leigh is demonstrating her utterly scrumptious Cherry Strudel, from her latest cookbook Wrapped in Pastry (released in 2012).  This one has a double-barrelled mouthful of a subtitle: “vegan pie, tart & roll recipes for a crowd, including soy free and gluten free dishes” – but hey, at least with that much info provided you know you can judge this book by its cover!

For convenience, here are the ingredients:
1 cup raw cashews (soaked for at least 6 hours, then drained)
1 Tbsp lemon zest
1/4 cup maple syrup
1 tsp Vanilla extract/essence
Juice of 1 lemon
2-3 Tbsp water
Packet of filo pastry (you’ll need a little less than half a normal packet)
1/2 cup melted Nuttelex for between the pastry layers (or applesauce as a low-fat, palm-oil-free alternative)
1-2 cups pitted cherries
1/3 cup slivered almonds
(plus icing sugar for dusting!)
Bake at 180 degrees Celsius for around 20-30 minutes, or until the pastry is golden.

You’ll get an idea of how good this particular recipe is at the end of the video, when I’m supposed to be wrapping things up and instead I just keep on eating the strudel! I guess I’ve got a one-track mind when there’s delicious food in front of me…
